For meats, slow growing Scottish wood provides a delicate smokiness that brings out the best in chicken, duck and bacon for a succulent and subtle flavour.
We also smoke world famous Ayrshire bacon. A product of the fat of the rich, damp, lush countryside of South West Scotland, it is the perfect bacon for smoking which gently enriches the flavour of this most traditional of bacons.
We use local, plump scottish chicken and duck breasts, of known provenance which are hot smoked to be moist and tender.
Enjoyed by the country folk of Ayrshire for centuries it can now be enjoyed anywhere.
